Since man came into being, organ meat has been the most valuable parts of hunting and slaughtering. To this day, among hunting naturalists, the liver is often eaten directly by the person who felled the animal or the liver is saved for a sick relative. Today, the liver is often thrown away or used for the production of animal feed. In the past, the dogs got the muscle meat and we ate the organ food.
In societies where people still live originally and where cardiovascular diseases, osteoporosis and other degenerative diseases rarely occur, they have always taken advantage of whole animals. No other food has so many nutrients in such high levels - and at the same time in the forms that are active and easy to absorb, digest and use by our cells for energy, growth, healthy endocrine systems and for healing - as liver.
In addition to the fact that beef liver has such a high and wide nutritional content, the nutrition is included in active, bioavailable forms and is therefore easily absorbed by the body. The various nutrients balance each other and allow them to be used to the maximum in the body's processes. For example. vitamin B6, B12 and folate available to the cells in active forms are needed so that we can absorb iron and form new red blood cells.
Beef liver contains the entire vitamin B complex. Vitamin A in liver is a chapter of its own. A single portion of beef liver gives you the daily requirement of real (natural) vitamin A.
You get easily absorbable minerals when you eat beef liver: potassium, magnesium, iron, copper, selenium, zinc. As Mother Earth designed it, the different nutrients promote the absorption of each other and ensure that you get a balance between them.

We can bust some myths about liver:
• Liver does not store toxins. The liver processes our toxins and ensures that they are carried out of the body via the intestines and kidneys. If toxins are in abundance, they are stored elsewhere in the body. Liver, on the other hand, is a storage site for many vital substances such as vitamins A, D, E, K, B12 and folate as well as for the minerals copper and iron
• In so-called copper excess, one often has too much of a different type of copper than the bioavailable form of copper found in the liver
• Synthetic forms of vitamin A produce toxic effects at much lower doses than the form nature provides in the liver. In the studies that form the basis of advice on vitamin A doses for pregnant women, synthetic vitamin A was used, not the natural vitamin found in beef liver. You can eat beef liver 1-2 times/week or beef liver capsules daily even if you are pregnant. (Then reduce or exclude your other food supplements that contain vitamin A, you don't need them.)
• Contrary to popular belief, many vitamins are found in higher concentration in liver than in the source where we usually find them; in vegetables, berries and fruit. As a curiosity, you can compare the nutritional content of apple, carrot and beef liver here . However, we should not stop eating vegetables for that reason, as they contain many other valuable phytonutrients and water-soluble fibres.
